In 2001, Brandon Barth opened his first Celt's Pub in Rosemount after working in other establishments from Fargo to Rosemount. In 2004 he purchased an existing pub in Inver Grove Heights on Concord Avenue and changed it to the Celt's tradition. In 2008 he took over another pub in Hastings, Minnesota and changed that to the Celt's tradition of good food and excellent service and a fun Irish Pub to meet with your friends.
Now in July 2010 Brandon again has opened a Celt's Pub this time in Farmington, Minnesota. "When I opened the first Celt's in Rosemount I wanted it to be a comfortable place that people were happy to come back to again and again and again and it has seemed to work," said Barth. "In the Farmington location we will have basically the same popular menu that has gone over so well in the other locations. We are adding breakfast seven days a week in our Farmington location along with serving lunch and dinner and we will be keeping the kitchen open until late every night of the week as a convenience to our customers in the area," Barth told The Irish Gazette. "We have a banquet room that is fit for wedding receptions, anniversary parties and any kind of banquet space people need," said Brandon. Celt's also has a catering service at this location to handle the needs in the general area which is a natural what with their large kitchen facilities. Celt's is also the exclusive licensed server of Seamus Irish Amber which is named after The Irish Gazette columnist, Seamus McKone, who writes Seamus Reports a feature column in the paper. Their fish dinner and fish sandwich is dipped in the special blended Seamus Irish Amber batter. All burgers served by the Celt's Pubs are 1/3 pound or more garnished with Celt's unique special fixings. Another favorite is the corn beefed "Brady Sandwich" that is very popular menu item at all the Celt's Pubs. Celt's Pubs have been known for their Corned Beef that is served every year on St. Patrick's Day. This past St. Patrick's Day Celt's Pubs went through over 1100 pounds of their specially prepared Corn Beef.  The Eagles Organization of Farmington is still running their pull-tab operation in the bar and will hold their meetings in the banquet room. Celt's has nightly drink specials with Happy Hour daily from 11a.m. until 6 p.m. and on Sunday nights Celt's runs a Happy Hour Pull tab special from 8 p.m. until midnight where you pay what you pull for your drink. This has been very popular as some lucky people pay only a few cents for their favorite drink. Celt's daily Happy Hour Menu features all appetizers at $5 or under from 3 until 6 pm.
